How to cook cauliflower soup

You will need
    • Cauliflower - 1 head of medium size
  • Flour - 1.5 tablespoons
  • Butter - 4 tablespoons
  • Chicken or meat broth - 2.5 cups
  • Onion - 1 medium head
  • Cream - 2/3 cup
  • Chicken Egg - 2 pieces
  • Cheese to taste
  • Nutmeg to taste
  • Green onions - to taste
  • Salt and pepper - to taste
Onions need to be cleaned and finely chopped. Prepare the flour heated with butter.
In onion or meat broth add onions and heated with butter flour. Boil. After boiling, cook on low heat for 20-25 minutes.
Cool the broth. In the cooled broth add cauliflower. Mix soup carefully. Next, rub through a sieve and bring to a boil.
Grate any hard cheese finely. Whip cream with egg yolks. Add grated cheese to cream and yolks. Dilute the mixture with one glass of broth, then pour it into the saucepan with the soup.Heat, not boiling.
A few minutes before the readiness add salt, pepper, green onions, nutmeg to taste.
