Omelet with mashed red beans

Soak red beans overnight in cold water, then boil until cooked with the addition of garlic and chili peppers.
From the finished beans, drain the water, leaving 20-30 ml, and beat with a dipping blender until a homogeneous consistency.
Add chopped cilantro, salt and pepper. Optionally, you can add cayenne pepper.
Beat eggs with milk, salt. Heat the pan with vegetable oil and pour the egg-milk mixture onto it. Cook over low heat until golden brown, then turn over and continue cooking for another couple of minutes.
On half an omelet put the mashed beans, cover with the second half. Next to lay arugula and halves of cherry tomatoes.
