Roast beef with mustard sauce- a step by step recipe.
- a whole piece of beef tenderloin weighing 1.2-1.5 kg;
- 3-4 cloves of garlic;
- 2-3 sprigs of thyme;
- 2 tbsp. l. grainy mustard;
- 1 tbsp. l. red wine vinegar;
- 1 tsp. honey;
- olive oil;
- salt, freshly ground black pepper.
Peel the tenderloin, removing all the films, rub with oil, salt and pepper, tie for compactness with cooking twine.
You can also marinate meat in olive oil with crushed garlic cloves and whole sprigs of thyme, tightening it all together in a film or tightly wrapped in baking paper, for example, in advance, for a day. It is better to salt the meat just before baking.
Heat a little oil in a large frying pan, throwing in crushed garlic cloves and thyme sprigs. Fry the meat on all sides until golden brown, wrap in foil.
Place the roast beef on a baking sheet in the center of the preheated 2500C oven.Immediately reduce the temperature to 1600C and roast roast beef to the desired degree of roasting, 30-50 minutes. Before serving, lay on a plate and let «relax» 10-15 minutes
For a sauce, beat the mustard, vinegar and honey with a fork, pour in so much olive oil to make a medium-thick sauce. Season with salt and pepper.
Cut roast beef thinly, serve with sauce.
