Easy BBQ Salmon Recipe with Sicilian Salsa & Lemony Cabbage Slaw

3/4 c. orange juice
6 tbsp. olive oil
red wine vinegar
1 1/2 tbsp. sugar
1/2 tsp. each salt and pepper
shredded savoy or regular green cabbage
shredded red cabbage
bulb fennel, trimmed
1/2 c. each sliced red onion
1/2 c. slivered fresh mint leaves
  1. Whisk orange juice, oil, vinegar, sugar, salt and pepper in a large bowl until blended.
  2. Add remaining ingredients except mint; toss to mix and coat. Cover and refrigerate at least 1 hour to blend flavors and slightly wilt cabbage.
  3. When ready to serve, add mint and toss to mix.
